About Flash Feasts

Welcome to Flash Feasts and thanks for stopping by!

My motivation for starting this blog stemmed from the realisation that, with ever-increasing demands on my time, my meal repertoire had become a bit tired. Conversations with friends revealed that I wasn’t the only one who often avoided veering off-piste for fear of using up too much precious downtime. As a passionate cook, I decided to step up to the challenge and chronicle my attempts to get out of my cooking rut.

With a focus on speed and simplicity, I hope to provide inspiration for anyone who craves delicious home-cooked food at the end of a long day but doesn’t want to spend hours slaving away in the kitchen.

The recipes you’ll find here fall into two categories: dishes that will take you around thirty minutes to prepare from start to finish and two-stage meals that you can start in advance and finish at the last minute, sometimes with the option to freeze ahead.

About me

My name’s Leonie (the version that rhymes with peony). I’m a self-taught cook whose passion for all things culinary began as a teenager, when I would regularly scour my parents’ cookbooks and raid the kitchen to concoct any dish that had caught my eye.

Living on the sunny Italian island of Sardinia in my early twenties provided me with the perfect opportunity to hone my skills. It was there that I discovered that mouth-watering meals could be knocked up using just a handful of fresh, good-quality ingredients.

I now live in Oxfordshire with my husband, our two young boys and our cat. Outside the blogosphere, when I’m not whipping up a storm in the kitchen, I mainly divide my time between family life and my job as an editor. It’s not unusual for me to have an elaborate cake project on the go and I also try to find time to relax with friends and indulge in some of my other interests.

There’s very little that I don’t eat or drink but I’m particularly fond of soft cheeses, good coffee, chocolate chip cookies, Aperol and anything smoked. If you have any questions, please send me a message – I’d love to hear from you!
